Honey Cloud Pancakes

LIST: one serving
1 large egg and 1 egg white
1/4 cup of warmed milk
1/4 cup of flour (plain or 00 or GF)
1 pinch of salt
2 teaspoons of honey
1 dash of vanilla extract
1 tablespoon of butter
Soft fruits
Honey

HOW TO MAKE:
Heat the oven to 200°C (392°F)
Heat a small 6″ oven proof frying pan
In one bowl whisk one egg white until it is white and peaky
To make the main batter, in another bowl, mix the the other whole egg with flour, salt, honey, and vanilla then whisk in the warm milk
Gently fold the egg white into the batter with a metal spoon
Melt one tablespoon of butter in the hot pan
Pour the batter in and cook on the hob (stove top) for a few minutes until starting to set at the very edge
Sprinkle some fruit on top
Bake the whole lot in the hot oven for 7 minutes until puffed up and golden
Drizzle with honey

When I first visited this recipe I thought the pancake looks really nice and big. Then I scrolled down the page and found out that it had bacon hidden inside. I just had to share this creative recipe. I don't think I would ever think of doing something like this. If I did it would have been accidental.

Egg Pancake Rolls

This looks yummy and easy to make! I'm also think of adding diced shrimp. If I do, I would separately cook the the shrimp and then sprinkle it with the spring onions.

Prepare:
1 egg
25g plain flour
3g potato flour
60g water
1-2 tbsp chopped green onion
1/4 tsp sea salt
pinch of ground white pepper

Making:
"Add pinch of ground white pepper in egg and beat well.

In a mixing bowl, mix flours and salt. Gradually add water in the center, whisking and incorporating flour from around at the same time. Spoon 1/4 of the beaten egg into the flour mixture. Whisk well and until lumps disappear and the batter is smooth.

Add spring onion into the remaining 3/4 egg.

Heat a frying pan and coat its bottom with a very thin layer of oil. As they become hot enough, turn heat to low. Pour half of batter into center of the pan in one go (half of the batter in this recipe shall make a ~18cm pancake).

As soon as the batter hits the hot pan, tip it around to get the base evenly coated with batter (I like to spread it as thin as possible).

As the top side of the batter is about to set, pour over it half of the remaining egg mixture and spread it out evenly.

Wait for the egg mixture to set a bit, yet still slightly wet, lift an edge of the pancake and roll (I lifted with my turner). Aid the action with chopsticks or fork in another hand, if required.

Fry the roll for a few seconds, or more, to brown to your liking.

Repeat with the remaining batter and egg mixture. Section the egg rolls to your desired length. Serve hot with chili sauce or terayaki sauce."

Dorayaki, Japanese Sweet Pancake

RECIPE AND PHOTO: Taste Hong Kong

Ingredients:
1 egg
45g cake flour
40g brown sugar
1/4 tsp baking soda + 1 tbsp water
1 tsp honey + 1 tbsp water
~3 tbsp nutella or ~3 tbsp red bean bean paste
~1/4 tsp cooking oil for pan frying
yields about 6 pancakes of about 8 cm

Method:
Beat egg until become frothy and add sugar. Whisk to dissolve.

Dissolve baking soda and dilute honey with water. Add them in the egg mixture.

Sieve in cake flour. Mix the wet and dry ingredients with a spatula but do not over-mix; break up any lumps by pressing them against the side of mixing bowl.

Cover bowl with a cling film, let the mixture rest for about 30 minutes.

Heat skillet over low heat, spray (or brush) a barely visible layer of oil on it. Ladle batter (slightly more than 1 table spoon) onto skillet. Flip pancakes after bubbles rise, about one minute and a half, and the bottom is golden brown. Fry the other side for another half minute or until done (the second side will not be evenly browned as the first due to the bubbles).

Repeat with the remaining batter; brush oil on skillet if required.

Sandwich two patties with nutella or red bean bean paste. Serve warm. If not consume immediately, seal or wrap the dorayaki to prevent it from turning dry.

*Make sure to cook these pancakes over low heat as the honey content in them burns more easily. If the skillet gets too hot, remove from heat for a while.

Japanese hot cake recipe from scratch

I found this recipe somewhere, and tried it out, and fairly like it. Only difference is that I used plain greek yogurt and didn't have baking powder. Because of no baking powder the pancakes weren't fluffy looking. Also the recipe was in metrics, I had to roughly convert the measurement to the lousy usa measurements.

Ingredient:
1 egg
3 tbs sugar or more if want sweet
pinch of salt
.5 cup (overflowing a bit) milk
2 tbs plain yogurt
1.3 tbs butter
1.2 cup cake flour or make your own: (1cup of flour - 2tbs of flour)+(2tbs of cornflour)
1.5 tsp baking powder
oil for pan

Purpose:
1. sift(mix) together cake flour, salt and baking powder in a bowl. set aside.
2. microwave together butter and milk until melted then add in yogurt and mix well.
3. in another bowl, whisk egg and sugar until thick & pale.
4. add milk and egg mixture into flour mixture. briefly fold and cut
through the mixture and do not overmix.
5. heat skillet over low heat. grease and drop a landful of batter onto the skillet, cook until bubbles appear on the surface. flip over and cook for one or two minutes until cooked and golden brown. repeat until all batter has been used up.
6. serve with butter and maple syrup.
