Honey Cloud Pancakes

LIST: one serving
1 large egg and 1 egg white
1/4 cup of warmed milk
1/4 cup of flour (plain or 00 or GF)
1 pinch of salt
2 teaspoons of honey
1 dash of vanilla extract
1 tablespoon of butter
Soft fruits
Honey

HOW TO MAKE:
Heat the oven to 200°C (392°F)
Heat a small 6″ oven proof frying pan
In one bowl whisk one egg white until it is white and peaky
To make the main batter, in another bowl, mix the the other whole egg with flour, salt, honey, and vanilla then whisk in the warm milk
Gently fold the egg white into the batter with a metal spoon
Melt one tablespoon of butter in the hot pan
Pour the batter in and cook on the hob (stove top) for a few minutes until starting to set at the very edge
Sprinkle some fruit on top
Bake the whole lot in the hot oven for 7 minutes until puffed up and golden
Drizzle with honey

Cheesecake in Jar

INGREDIENTS:
½ cup plus 2 tablespoons granulated sugar
zest of one lemon (optional)
2 packages cream cheese, 8 oz each; room temperature
2 large eggs; room temperature
¼ cup heavy cream
1 ½ teaspoons pure vanilla extract
1 cup fresh berries

DIRECTIONS:
1. Preheat oven to 350 degrees F.

2. Begin to boil a large pot of water for the water bath.

3. In the bowl of your stand mixer fitted with your paddle attachment, combine the sugar and lemon zest and mix until the sugar is moistened and fragrant. Add in the cream cheese and cream together until smooth. Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream and vanilla and mix until smooth.

4. Pour batter into canning jars until about ¾ of the way full. Place jars into a larger pan and pour boiling water into the larger pan until halfway up the sides of the jars.

5. Bake 25 to 30 minutes, the edges will appear to be set, but the center will still have a little jiggle to it.

6. Carefully remove the cheesecake jars from the water bath and place on a cooling rack to cool completely. Once the cheesecakes are completely cooled, place them into the refrigerator for at least 5 hours. Top will fresh berries and serve.

MYBAKINGADDICTION NOTES:
- For glossy berries, simply add 1 tablespoon of hot water to ¼ cup apricot preserves. Blend until combined and thinned out. Place the berries in a bowl and gently brush and toss the berries with the apricot and water mixture.
- If you are not a fan of lemon, simply omit the zest.
- If you are missing the graham cracker crust, serve with graham sticks.
- The jars pictured above are Weck (7.4 ounce) Tulip Jars.

Pancake with Bacon

When I first visited this recipe I thought the pancake looks really nice and big. Then I scrolled down the page and found out that it had bacon hidden inside. I just had to share this creative recipe. I don't think I would ever think of doing something like this. If I did it would have been accidental.


How to Poach an Egg

I heard this term while in the Agrace Kitchen. I was curious what it was. I found many bloggs that they have the poach egg on bread. I don't like runny yolk, I can tolerate it in some food, but in my opinion bread and poach egg looks icky and the bread would get soggy once you break the barrier. I don't like soggy bread either.

The video is without vinegar and I thought his trick was nifty.

I didn't find its video using Google. But My mum is watching this on PPS. This is the time where I wish I could read Chinese. Even though, I don't understand it fully I like this drama and my mum explained some of the content.

Okra with black fungus

List:
okra
dried black fungus
water
oil
salt and pepper

1. hydrate the fungus and wash/rinse okra
2. then want to clean the fungus by checking if each piece still have part of the stem/bark. You want to pluck it off. And slice the bigger fungus.
3. slice the okra. I sliced and threw away the top part.
4. In a frying pan or wok add oil. let the oil heat up then add the okra in. Stir fry for a few minute. then add water and then fungus and then salt and pepper. stir.

chicken soup with cabbage and tofu

My parents bought this new ceramic pot from China. It awesome. Great for cooking soups but its a bit small. Dad boiled some chicken and we still had some of the water it was cooked in. So I used the broth and made this soup.

For the amount, I just used how much I wanted for my soup. I'm a veggie person so I overfill it with cabbage.

List:
water or chicken broth
cut the cabbage
black fungus, cleaned and sliced
dice cooked chicken
largely cubed tofu
frozen edamame beans without its shell
salt and chicken granule bullion or pepper

Direction:

Add water, tofu and edamame bean. Let it boil for a few minutes, maybe 5. Then I add salt and cgb. tastes the soup if enough flavor. Then I add the cabbage in and let it cook then top it off with the chicken and black fungus. I cover the pot for a few sec.

Oatmeal and Soft-Cooked Egg

List:
1/2 cup quick-cooking rolled oats
Coarse salt and ground pepper
Nonstick cooking spray
1 large egg
2 tablespoons shredded sharp cheddar
1 tablespoon thinly sliced spring onions

Directions:
In a small saucepan, bring 1 cup water to a boil. Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes. Meanwhile, heat a small nonstick pan over medium. Coat lightly with cooking spray. Add egg and cook until white is set and yolk is still runny, about 3 minutes. Season egg to taste with salt and pepper. Serve oatmeal in a bowl topped with cheese, egg, and scallion greens.

Ginger and Spring Onion Dipping Sauce


This is a dipping sauce for boiled chicken. Chinese people like to eat there chicken parts boiled. They also dipped the chicken in soy sauce too. But I was feeling in have this as the dip. Making it once in awhile, it tasted fabulous. It was really cool watching it sizzle.

My mum said that I added to much oil but it seems the right amount to me.

List:
Ginger
spring onion
oil
salt
chicken granule bullion or pepper

1. Finely randomly chop ginger. Do the same with spring onion. Both about the same amount. In a ceramic or glass bowl add salt and chicken gran. bull. with the chopped ginger and spring onion. I stirred them and tasted it if I need more flavor. you can also tasted it after you pour the oil and add more flavor as needed.
2. In pan heat up oil until you see that the oil start to smoke a bit. then our the oil directly into the bowl of ginger and spring onion. Be careful it will boil viscously when you pour the hot oil.

Simple Red Cooked Pork Belly

This dish was a bit sweet and not that salty. if you don't like your food sweet than add about 1 or 1.5 tablespoon of sugar. You can add more to your taste after the 30 minutes. Adding sugar makes the liquid a sticky-like consistency so less sugar would make it less sticky-like.

There is also an alternative were its the same direction, you just add vinegar and more sugar. You would add the vinegar when the liquid is about half it was before. Adding vinegar and sugar the taste would be sour and sweet, which is also pretty good. 

List:
3 tablespoon kikkoman soy sauce (or any light soy sauce)
1 tablespoon mushroom flavored superior dark soy sauce (or any dark soy sauce)
small spatula scoop of Hoisin sauce (optional)
1.5lb side pork belly cut into less than 1 inch cubes or rectangle
6 slices of ginger
roughly 2 tablespoon sugar
rice wine or any kind of cooking wine 
chicken granule bullion
water

Direction: 
boil the cubed pork in water for a few sec than drain and rinse away the foam.
In fry pan or wok add oil. Let the oil heat up. Add the ginger and hoisin sauce. Stir fry few second and add the rinsed pork. Stir it around while adding both soy sauces, sugar, and wine. Then add water until it covers the pork. Let it come to a boil for 2 minutes and turn the heat from high to medium heat with the cover on let it cook for 30 minutes. After 30 minutes check that the liquid thicken and sticky-like. Taste it if its sweet, salty enough. If not add a bit more sugar or salt or kikkemen soy sauce. This step is also were I add chicken granule bullion. 


If there is still a bit more liquid than you like and not thicken yet after 30 minuets, turn the heat back to high to quicken the process. It should take a few minutes, so keep your eye on it or it will dry out.

Quinoa Salad Recipe

I made this in Agrace kitchen. Never had red quinoa before. Has a unique texture. I didn't really like the taste because I don't like basil very much so I think it tasted weird. I'm not sure if herb dressing was a vinaigrette because I couldn't taste the sourness. So I think it was just plain oil blend with herbs. Don't know, got to test it out. Well if it were me I would add olive oil.

Need:
drained, cooked red quinoa
chopped fresh cilantro - want the stem to be chopped smaller than the leaves part
chopped fresh basil leaves
Fresh Herb Vinaigrette - makes the quinoa moist and not dry
salt - add to your taste

mix together.

Simple Chicken Salad

Hospice chef also had me made chicken salad. I don't eat those kind of diet, so it was my first time making it and it was easy and simple. You can adjust the amount of mayonnaise, salt, pepper to your liking because I'm not sure if I remember the salt and pepper measure amount right.

UPDATE 7/1/13:
I took a picture of the recipe and have change the measurement to the correct ones now.

LIST:
1 cup of small diced carrot
1 cup of small diced celery 
6 cup of chunky diced cooked chicken meat (with no fat or skin)
1 tbsp salt
1 tsp pepper
1 1/2 cup mayonnaise
1/2 cup dried cranberries  

Mix together.

1000 Island Dressing

I also made 1000 island dressing at the hospice kitchen. It was easy to make. I don't remember the salt and pepper measurements if its tbsp or tsp. And also if parsley and pickle relish 2 or 4 tbsp. Well just add little bit at a time and taste it to your liking.

UPDATE 7/1/13:
Okay I took a picture of the recipe and got the right measurements which I have changed below.

Ingredients:
1 cup mayonnaise
1/3 cup ketchup
1 chopped hard boiled egg
2 tbsp chopped parsley
2 tbsp sweet pickle relish
1/2 tsp salt
1/2 tsp pepper

mix together.



Spinach Filling Recipes

I'm volunteering at a hospice care center in their kitchen. The chef had me rolling up noodle with spinach filling. It looked so good when I was working and simple to prepare and make. So I search online for the recipe and found two different presentation that I like and also have the noodle to make it.

Filling recipe:
4oz cream cheese
15 oz ricotta cheese
1 or 2egg
1 package frozen spinach
1/2 tsp salt and
1/2 tsp pepper
1/2 tsp Italian seasonings
1 garlic clover, minced
1 cup Mozzarella cheese
pasta

Dip and garnish:
pasta sauce

Covered, Bake at 350 F for about 30 if pasta already precooked. For uncooked pasta bake for 1 hour.
