I was excited while baking this. ^^ The comment on allrecipes were raving how yummy it was. I took into consideration the tips they suggested.
I modified the recipe a bit...
I bought the pumpkin pie spice instead. I wasn't sure how much I should use, but I figure 1/2 + 1/2 nutmeg and cinnamon equals to 1 teaspoon of pumpkin pie spice. My dad needs to watch his blood sugar, so I used less than 1/2 cup of brown sugar. I worried about my vanilla extract because my parents turn off the fridge when they went to China. So I tasted the vanilla extract, it tasted a bit acidic and bitter almost like rum or beer. I didn't know what it is supposed to taste like so I omitted that from pie filling. My pie filling was a bit runny, and I felt like it wouldn't set when baked so I mixed in 1 tablespoon of flour. Know I think I should add another tablespoon of flour....
Need:
1 large sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust
Need To:
Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Chocolate Peanut-Butter No Bake Cookies
I made this. I really wanted something chewy like a cookie when I made this. Then I realized we were out of eggs! I didn't have a car and it was cold out, not going to ride the bus.

This is a bit late but this was my spring 13 class. Well I was worried about my final portfolio for english but I passed with flying colors and even submitted it to the writing contest, never heard about the result though. I don't remember which chemistry class I took the fall 12 or spring 13 where I had a cold while taking the final exam...
This is my current fall class and today was the last day of class! I'm been busy doing the last assignments due on monday. It is horrendous. Even though this fall schedule looks neatly order and it is not easy as last year. This year there was sooo much reading I have to do especially for history and lgbt, required 3 books. I'm a very get-your-homework-done-early but I just couldn't read all the readings I had to read. It was just too much. And this year I took 16cr. The postive aspect for some of my classes it that there is NO final exam for lgbt or ap1, so happy about, but there is a 8 pager paper for lgbt the catch is to use primary resources using archive and special collection in the library but can't check the sources out, which is inconvenient and a take home assignment for ap1, which is also no fun, good thing I'm working in a group or else I would be stressed out this weekend, there due on monday and I have a exam on monday too.I am so happy that I got by ap1 and its over... not, I have to take ap2 next semester :(, but the professor I chose is liked by student=good at teaching :).
The nursing classes are no joke. We had to read 25 ch, take 23 quizzes, take 2 test that covers like 6 chapters or so.

So much ads on gooddrama and viki, watch with NO ADs
I didn't know that there was so much video ads on viki and gooddrama website. I use chrome browser. I have "Java Popular," "Adblock Plus," "Tampermonkey," and "Delicious Bookmarks Extension (Beta)" as my extensions. I think its the "Java Popular," is the reason I watch dramas on those website ad free.
I came to notice so much ad is because my chargers wire splitted, I only had it for a year and it slitted, so my macbook was going to die while I was still watching "Golden Rainbow" on gooddrama. I used my mums computer and she didn't have those extension, hence the videos ad interpreting my enjoyment of the episode.

Brunch: Egg fillet sandwich
There is no fresh veggies in the fridge to cook with for a few days now. Need to go grocery shopping sometime soon. But I did have avocado, eggs and frozen fillet in the fridge and few slice of bread left. I whipped up something pleasing to eat. It taste not half bad.
NEED:
beat 1 egg with pinch of pepper and salt
1 thawed fillet with spices: italian seasoning, pepper, salt, white pepper, wine/lemon,
some avocado
mayos
slice of bread
any oil
HOWTO:
I first cooked the beated egg like a pancake and put it aside. then I cooked the fillet, using the same pan, I added some olive oil and let it heat up and added the fillet then pour a bit of cooking wine on fillet, then sprinkle the spices on. cook it on one side for a minute and then flip it over. I cooked it until when I use my spatula gently to see if the meat can easily separate along the striated lines. Turn off heat and set aside
Then I spread mayo on one slice of bread and put slice pieces of avocado on the other slice and use the knife to mash it up a bit while spreading it. I folded the pancake like egg in half, put on top of slice then put fillet on top.

Dragon Ball marathon
I think it was last week, but I read the whole series over the weekend! In my lab class, my table mates were talking about dragon ball, particularly Buu. I was reminiscing the anime. I never read the manga before and there was an update on a manga website of dragon ball, I just click on it and start to read it.

I would be wonderful there was english transition, I for one, would read it. I can guess how the manhwa might end but I wouldn't know how the plot was build up and the adventure the characters experience.
And also the last few chapters the ordering of the pages was out of place.

ADD broth to skillet; stir to scrape up browned bits from bottom of skillet. Add cream cheese; cook 2 to 3 min. or until cream cheese is melted and sauce starts to thicken, stirring constantly with whisk.

Add soy sauce to the steamed egg and then sprinkle some spring onion on top. Heat vegetable oil over a high heat, and then add a splash of the hot oil to finish.

Sandwich with Rou Song, asian style.
Hello readers,
I had this carving for rou song this weekend. I had was wondering what recipes there are for rou song. I don't usually eat/buy this but when I do it's usually with rice porridge. I only found a few recipes, not as many as I was hoping for.
Well my cousin bought this slice of bread called....and it taste amazing. The bread was moist, chewy and more compact. I usually buy those cheap and long bread at the grocery store, the ones that are loose. I don't eat bread much because the ones I buy aren't that tasty. I was missing out on good bread.
I scrapped up the ingredients I had in the fridge to make a sandwich. No lettuce or tomato or cucumber or avocado. But I do have sliced ham, mayo, rou song, and a carrot. I used a peeler to "peel" the carrots thin strips.

Mini Pineapple!
Went to the metro mart and they had mini pineapple!! They cost $4.99, crazy price. Who know that there were mini pineapple. I wonder if they were genetically modified.
Birthday 20 years old!!
October 12, 2013 is the day were I was induction into Alpha Lambda Delta and also my birthday!!
The induction was at my university's union fireside lounge. The room was dimly lit. The inductees got to side in comfy cushioned chair. It was a fabulously couch. The induction was no different from what I experience with the honor society induction in high school.
To celebrate my birthday, my cousin MM had her friends over to have HOT POT!! Our landlord, couldn't make it because it was his grandma's birthday too.
Any how, when my induction was over Sherry picked me up, then picked my cousin then Pung Fei up. And we went grocery shopping for hot pot ingredients. We bought about 150 worth of food, there was plenty of leftover ingredients left. We stuff our faces and became so full, our tummies were popping out and had to stand up. We didn't have room on our square table and had to put some on another counter. ^o^
We left to go shopping at 2. Don't know when were came back but we finished preparing and started eating hot pot at 6 to 8. There was beer for the legals. I'm still underage and don't like the taste of alcohol so I had whole milk and orange juice. ^^
PF bought a Tiramisu Cake, as a birthday present, but he left early, at 9, so he didn't get the chance to eat it. We were so full we had to wait and rest for a while. Ate the cake at 10, the landlord came home by then and we invited him to join us. The cake was was yum yum good.

Sherry gifted me a happy B card and a embroided hanky, it has 2 simple looking flower, elegant and delicate looking. And MM presented a red coach wallet. A wallet was on my list to buy, but I never found the right one that I was looking for.
Today was a lovely day.
Toilet photo story: It not as disgusting as it looks. Well okay, you know there was alcohol, well one of MM's friend wasn't feeling so well...jk. No that's not what happen. We just dumped the leftover broth, the hot pot, into the toilet and flush it. It just looks disgusting when it's in the toilet.

Ingredients
1 slice bread (try thick, crusty artisan breads, sourdough, rye, wheat, multigrain or whatever bread you prefer)
½ ripe, Fresh California Avocado, peeled, seeded and mashed
1 egg – Optional
2 slices heirloom or beefsteak tomato – Optional
2 slices cooked bacon (try maple bacon, peppercorn bacon, turkey bacon or veggie bacon) – Optional
Fresh cracked pepper – Optional
Sea salt to taste – Optional
Instructions
California Avocado Toast with Fried Egg
Toast 1 slice bread and spread with 1/2 ripe, Fresh California Avocado (mashed or sliced). Spray a small nonstick skillet with cooking spray and fry one egg as desired.
Place cooked egg onto avocado toast, sprinkle with salt and pepper if desired.

1 Tbsp. hoisin sauce
1 tsp. low-sodium soy sauce
8 oz. shiitake mushrooms, stems removed, caps sliced ¼-inch thick
½ tsp. toasted sesame oil
2 Tbsp. extra virgin olive oil, divided
1 ripe, Fresh California Avocado, seeded, peeled, and sliced
½ cup finely julienned or shredded carrots
2 green onions, white and light green part only, thinly sliced
4 large butter lettuce leaves
Sriracha for serving (optional)
Instructions
Combine the beef, garlic, ginger, hoisin sauce, and soy sauce in a bowl and mix well. Form into burger patties about ½” thick. Set aside.
Heat half of the olive oil in a large non-stick skillet over medium high heat. Add mushroom slices and sauté until golden, about 4-5 minutes. Remove from heat and transfer to a small bowl. Toss with the toasted sesame oil.
Heat the remaining olive oil in the pan over medium high heat. Add the burger patties and cook for 3 minutes, then flip and cook for an additional 3-4 minutes for medium-rare. Remove the patties from the pan.
Place each burger patty on a lettuce leaf. Top each with the mushrooms, avocado slices, carrots, green onions, and bean sprouts. Serve with sriracha (optional).

Child obesity: Parents encouraging to overeat
The current generation, many of the children play less outdoors. Which is one of the factor for obesity. But I think the major factor is parents encouraging children to overeat. In the past centuries, parents encourage children to overeat was to protect them from famine. During those time period, I think food wasn't as widely distributes and abundant as of today.
Berger mentions a study of low-income family in NYC. The study concluded that many overweight children in the low-income family correlate that increase in weight as family income fell. Which indicates that habit, not genes, are the cause of overweight. Back to the thought that parents are protecting their children from hunger. But, today, food is abundant, especially fast food which are inexpensive, but poor contribution to nutrition of child's growth. Thus, depending on what the children's nutrition source is important.
Between age 2 and 6 the appetite of a child decrease. "However, instead of accepting this natural change, many parents fret, threaten, and cajole their children to overeat" (210-11). This might happen because of the parent's mind set that children are not eating enough. Bringing the study findings and this quote together, Parents are creating a dysfunctional eating habit for the child. A two year old would eat until their full but a five year old would eat everything that is on there plate.
The children knows when they're hungry and full. Please don't force a child to overeat. And please don't use food as a reward either. Both of these action would establish unhealthy habits.
Berger states an example that reminded me of my childhood eating experience and made me want to write this post. This quote implied that a parent telling their children to "Eat all your dinner and you can have ice cream."

They tell me that but I can't eat anymore, I was full, but I still had some rice left. While I'm look back at these memories, I remember that I would hide my leftover rice in napkins and throw them in the trash and then put the bowls in the sink. I do not know why did that. I could have just throw the rice directly in the trash. But whatever my 6 year old mind was thinking that was what I did.
Today my parents, mostly my mother, tells me to finish my bowl of rice or eat more of the side dishes. I also when home few weeks ago and mom said that my face looks like its gotten thinner, yea right. And was fretting if I was regularly eating.
At a gather with family, my relative that pester me to eat more is a polite, cultural, host thing. I also grew up with the mind set of not wasting food or things.
Berger mentions a study of low-income family in NYC. The study concluded that many overweight children in the low-income family correlate that increase in weight as family income fell. Which indicates that habit, not genes, are the cause of overweight. Back to the thought that parents are protecting their children from hunger. But, today, food is abundant, especially fast food which are inexpensive, but poor contribution to nutrition of child's growth. Thus, depending on what the children's nutrition source is important.
Between age 2 and 6 the appetite of a child decrease. "However, instead of accepting this natural change, many parents fret, threaten, and cajole their children to overeat" (210-11). This might happen because of the parent's mind set that children are not eating enough. Bringing the study findings and this quote together, Parents are creating a dysfunctional eating habit for the child. A two year old would eat until their full but a five year old would eat everything that is on there plate.
The children knows when they're hungry and full. Please don't force a child to overeat. And please don't use food as a reward either. Both of these action would establish unhealthy habits.
Berger states an example that reminded me of my childhood eating experience and made me want to write this post. This quote implied that a parent telling their children to "Eat all your dinner and you can have ice cream."

Blueberry Walnut Streusel Muffins - Farberware Cookware
Ingredients
For the Muffins:
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/2 cup milk
1/2 cup canola oil
2 eggs lightly beaten
1 teaspoon vanilla extract
1 cup fresh blueberries
For the Topping:
3/4 cup all-purpose flour
2 teaspoons packed light brown sugar
2/3 cup walnut halves coarsely chopped
1/4 teaspoon ground cinnamon
4 tablespoons butter cut into small pieces
Yield: 12 Muffins
Directions
Preheat oven to 375°F. Line a 12-muffin pan with liners.
For the muffins, combine the flour, sugar, baking powder, nutmeg, and salt in a medium bowl. Combine the milk, oil, eggs, and extract in a separate bowl. Pour the liquid mixture into the dry mixture and stir until just moistened. (Don’t overwork the batter). Gently stir in the blueberries. Spoon batter into the prepared muffin cups.
To make the streusel topping, combine the flour, sugar, walnuts, and cinnamon in a bowl. Use your fingers to rub the butter into the mixture until it begins to stick together and form crumbs when pressed. Sprinkle the topping evenly over the batter-filled muffin cups.
Bake in the center of the oven until the muffin tops are nicely browned and a toothpick inserted into the center comes out clean, about 23-25 minutes. Remove from the oven and cool 5 minutes. Remove muffins from the pan and cool at least 10 minutes longer on a wire rack before serving.

Bloody pants, menstrual, acupuncturist
I don't have classes on Fridays. And usually stay home doing homework. However today my roomie started working yesterday. And I was all alone. So I rode the bus to campus library. No, that(library) wasn't the reason why I went. I have this Lab practical next week for Anatomy and Physiology. And they have open lab for extra practice and extra credit. I went for the extra credit. Then I went to the library to write my 2 papers that is due next week. I spent 2 hours there. when suddenly...
This topic might be gross to some of you it's about menstrual things and the natural course of nature, you got your forewarning of being disgust.
...massive amount of blood and blood clots propel out of my V. lol, like the description? I had a pad on so like no worries, right? But no, it had to leak out...I calmly pack my stuff into backpack and quickly rush to the bathroom, which wasn't far away. I could feel the blooding creeping down my thigh and soaking my jeans. Just look at that picture! This was like the worst and most visible blood stain I had on my pants. Had to walk like that to the bus stop. (,,-___-,,). Though, I did loosen my backpack straps and had my backpack cover my butt.
I don't know about other females but I have like the worst menstrual cramps and sore back on the first 2 days. I also had a headache this time. And its been a few years not that I have many blood clots too. So I don't use tampons. I used to have irregular time period and long periods, but it has come and go in a regular and predicable manner.
Western doctors don't help at all, but prescribe birth controls and suggest ibuprofen. And I have a controversy with using birth controls. I have recently, over the summer, have been seeing a acupuncturist. Heehee. I was excited to experience it for the first time where I have seen it many times in dramas! It wasn't as traumatic as it was getting a shot. You could hardly feel the poking, only if the acupuncturist aimed on a nerve or was off a bit. Oh those hurt but quickly goes away when acupuncturist remove the fine needle and re-poke it in the right place. I pay $60 per session and the herbal pills cost $12 per bottle. The pill bottles are costly. I bough some online for $9 at https://www.herbsdirectusa.com/. I seen the acupuncturist once a week for a month then see acupuncturist once a month.

I was gushing blood then my mouth was crawling with crayfishes.
I had this crazy dream last night. It was ridiculous and creepy at the same time. I don't know where these stories/ideas come from.
I don't remember clearly before where I was gushing blood like a faucet running water, out of my nose. I think I was poisoned or something because the blood was dark red-black. Luckily I was in the bathroom getting ready to wash my hand when the epic nose bleed happen and I also cough up blood. It wasn't in pain. I was actually in a hospital and there was a suppose doctor that was done with pottying but she just ignore my episode and went out. My dream state was in disbelief that she walk out. When I stop gushing blood. It was like a camera close up to my mouth. The image was that I had small red dots all around my inside cheeks like small red fish eggs. Well I was like whatever and continue dream life. This is were there is a transition to my dream. I was dreaming about long lived cat like house cat shifter and dog shifter. Those two groups don't have a good relationship. I don't know what that dream was but before I woke up. Small crayfish were crawling or hatching out of my inside cheeks. I tried to pull them out but they would pinch onto my inside cheeks. And my inside cheek were a scramble omelet with eggs, green pepper, and dice onions with grounded pepper. Torn my Nail!! OMG Blood!. + first aid care
It was 2 day before school starts at night time. I got my nail stuck somewhere on my backpack. I lift my hand up and I see that my nail was bloody. I stared at it shockingly and go OMG! Then I thought my nail was really weak; I'm I lacking some kind if vitamin/mineral? I inform my parent about it and show them the bloody nail. My mom was creeped out. She was also watching Good Doctor--the blood, surgery...--might have effect mum getting goosebumps/
I first took a picture of it before treating it. The basic aid is to cleaned it (rinse with water if dirty) and disinfect it (used alcohol) and then put on antibiotic ointment and lastly band aid it or bandage it for the night. That is what I did excluding the water part. I also took the band aid off the next day and let it "air" healed. I didn't feel the pain when it ripped off until the next day.
Fact: I learn in high school anatomy and physiology that the hand it the most susceptible to infection. Do anyone know why? Just think about it, it's logical.
My injury was just a minor one. Just a small section of my nail bed torn. It was so inconvenient and uncomfortable when I used that finger. It would be terrible if the whole nail come off.

curry chicken
This evening after I help color my mums hair. I sat down and smelled curry out of no where. Then I was craving for some curry chicken! I also was craving for some ramen the other day but we didn't have any. So today we went to the asian store and bought different ramen flavors and bought chicken thighs from Walmart. Now I'm cooking the curry chicken I so wanted to eat.
3 chicken thighs, diced into bite size
about 4 cups potato, diced chunky
ginger, 5 slices
about 1 tbsp of cooking wine, any kind
1 tsp of ground white pepper
about 2 tbsp curry powder, add more if want stronger curry flavor
about 2-3 tbsp of sugar
about 2 tbsp of salt
about 1 tbsp of chicken granule bouillon
water, enough to cover the chicken and potatoes
My mum told me that this process is similar in cooking red belly pork, just different ingredients.
In a wok or pot, let the oil heat up then add ginger and stir for a second and add the chicken. While stirring add the wine. When most of the chicken's surface is cooked, add the potatoes and water and all the other ingredients. When starts to boils for a few minutes there would be brown foam just spoon out the foam when you see it. Cover it and let it cook until you can see that the sauce has lessen, check on it a few times. Then have a taste of the sauce to see if you need to add more curry powder, salt, sugar, or chicken bouillon. If the potato is tender than your done.

Second year of College. More reading to do than last year.
There is so much reading I have to do this year. I have bought 10 books this semester!! 6 are book size, 1 loose leaf book (lots of pages and ch 23 = 23 quizzes!), 1 textbook bundle includes the lab book, 1 workbook, and 1 course reader. I'm not looking forward to all these readings. I'm still in the process of getting used to this semester assignments, organizing and managing my time. I'm also planning to become a tutor for my work study. I know that I will not have much luxury to read manga and books, watch dramas, blog, and do all the other stuff as I did last year.
And more paper I have to write. I've been praised for my writing before from my teachers, but I'm still not confident in my writing and not looking forward to them. But then I think positive that all this writing will improve my college writing even more. I should feel good about my writing, I did passed my english course, but I think it's a habit because English is my second language per se and also I'm a slow at writing. I'm the person who thinks deeply and sometimes over thinks things.

Maybelline : define a line eyeliner review
The Maybelline : define a line eyeliner sucks, the worst eyeliner I have ever bought. I bought the slate gray one, it was already dully sharpen. It was too creamy. It gave my a bold line. It also smudge all over my lower lid, while I kept blinking. And I have no idea where the built-in sharpener is and how to sharpen it too, the tip has became a flat surface already. I also can't find a how to video or instructions online. Maybe it just doesn't work on my asian eyes, whatever, it was a waste of my $4 and something and wasn't a look I was thinking of. Maybe I should buy a waterproof one next time or start using liquid eyeliner.

Cracker + tuna salad + tomato and avocado
Some cracker were on sale at Copps. I about 3 different brands of crackers. They are whole wheat Ritz, hint of salt Wheat Thins, and brown rice baked with red beans Triscuit. I had Ritz before so I opened the Wheat Thins cracker. They taste pretty good but I was surprise that it taste a bit sweet. Well I saw on the Ritz box a topping recipe, it made me remember the tuna salad I made in the Agrace Kitchen. I also had fresh tomato grown in our mini garden and avocado at hand.
Tuna Salad
1 can (6oz) tuna, drained
about 1/4 cup mayonnaise (I didn't have any mayo so I subbed it with ranch)
At first I sliced the tomato and then sliced it in 1/4. For avocado I sliced it in half and then used the knife to slice horizontal and vertical in it's shell, I shouldn't have done that... Accidentally, "You" then becomes the new teacher for the nearby high school, under the new name Takeda Shindo, and according to a deal of "Hammer Session" with the headmaster.

Cake Brownies and cake flour substitute
1 1/2 cup cake flour (note below)
3/4 t baking powder
1/4 t salt
combine items above in bowl
3/4 cup butter or margarine, soften
1 1/2 cup sugar
beat butter and sugar with electric mixer in another bowl until light and fluffy. Add 3 egg, 2 t vanilla, and 4 oz unsweeten chocolate coarsely chopped, melted and stir in flour mixture by hand until just combine.
350 F. 30-35 minutes or until toothpick inserted in center comes out almost clean.
cake flour substitute - (general rule: 1 cup cake flour= 3/4 cup all purpose flour + 2 tablespoons cornstarch, packed)
The easiest way to do this substitution is to put 2 tbsp of cornstarch in the bottom of a 1-cup measuring cup, then fill the cup as usual with all-purpose flour and level top.
If you only need 1/2 cup of cake flour, put 1 tbsp cornstarch in bottom of 1/2 cup measuring cup, then fill and level as above.

Lemon Sugar Cookies

I made Lemon Sugar Cookies, it's fresh out of the oven cooling and they smell lovely. I didn't have a lemon but I did have lime. I have a cheese grater and they don't grate zest very well, so I only got a teaspoon overfull of lime zest from 2 limes, but I did get a tablespoon of juice from half of a lime. I didn't know what to do with the other half so I just squeeze some extra juice into the butter/sugar mixture. I had no idea what was sanding sugar so I just used brown sugar to sprinkle on some of the cookies.
These taste pretty good. A buttery flavor with zesty tang. My cookies were moist, soft, and not too sweet. I'm also happy that they're not bitter!

3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups granulated sugar
1/4 cup packed light-brown sugar
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 cup unsalted butter, (2 sticks), softened
2 large eggs
Sanding sugar, for sprinkling (optional)
Preheat oven to 350 degrees. Sift flour, baking soda, and salt into a bowl; set aside.
Put sugars and lemon zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, about 1 minute. Mix in eggs, 1 at a time, and then the lemon juice. Reduce speed; gradually add flour mixture, and mix until just combined.
Scoop dough using a 2-inch ice cream scoop; space cookies 2 inches apart on parchment-lined baking sheets. Flatten cookies slightly with a spatula. Sprinkle tops with sanding sugar, then lightly brush with a wet pastry brush; sprinkle with more sanding sugar.
Bake cookies until golden, about 15 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to racks using a spatula; let cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.
Trick in Cracking Hard Boiled Eggs' Shells
I learned a new trick today, while volunteering in the kitchen. I used to crack the hard boiled egg shells by knocking it on a solid surface and peel them. The cook showed me that rolling the egg with your palm while applying light pressure which was quicker in cracking the egg and loosen the shell which should be easier to peel too.
Doing the trick on egg shells that are smooth with no crack after boiled and iced, I noticed that the majority of the egg whites also crack open with the shell. So, I first knock it once and then rolled it and then peel it.

Cream Biscuits

Ingredients:
1 3/4 cups White Lily Self-Rising flour
1 cup heavy cream
1/4 cup melted butter (for tops of biscuits)
Directions:
Preheat oven to 500F degrees. Spray a baking sheet with a little nonstick cooking spray.
Measure out flour into a large bowl (don’t pack your measuring cup, scoop and swipe off excess flour).
Gradually stir in cream, adding enough to moisten flour to a sticky dough.
Mix gently then turn dough out onto a lightly floured surface (use the self-rising flour).
If dough is too sticky to handle, add just a sprinkling of self-rising flour to the top.
Fold the dough two times to form a ball.
Pat or roll dough gently to a 1/2 inch thickness.
Take your biscuit cutter and dip it in a bit of the self-rising flour (this will keep it from sticking to the dough as it cuts). Then begin to cut out biscuits as close together as possible.
Do not twist your biscuit cutter when cutting them out. Just press down, and pull up.
Place biscuits on baking sheet. Then roll the dough back up and spread it out again. Then do a second cutting. Don't cut the dough more than twice.
The dough starts to get tough after that and it changes the texture. So two cuttings will be the maximum for these biscuits. I get 6 biscuits from this recipe. Place biscuits on your prepared cookie sheet.
Note:
Place biscuits close to each other (with sides touching) for soft biscuit sides. Separate biscuits if you want a biscuit with slightly crisper sides. Brush the tops of the biscuits with a bit of melted butter. Then place biscuits (one sheet at a time, in the middle rack) in preheated oven and bake for about 8-10 minutes or until tops are golden brown. Brush tops of biscuits with a little more melted butter and serve while warm.

Pour in the buttermilk. Stir until a loose dough forms. Dough will be sticky.
Press biscuit dough into baking dish (right on top of the melted butter).
It is easiest to spread it out with your hands.
Take a sharp knife and cut the biscuit dough into 9 squares before baking.
Bake for about 20-25 minutes, rotating once during baking.
If you notice that some of the butter that is coming up to the top is getting brown, just take a paper towel and dab around the edges a bit.
Oven times do vary since different ovens have different hot spots, but basically biscuits should be golden brown on top and spring back to the touch.
Cook’s Note:
I really recommend only using buttermilk with these but if all you have on hand is regular milk then you can use that (just not skim milk, that stuff is far too watery). Keep in mind though that when you use regular milk, you'll have to cut back on the amount you use because regular milk is much thinner than buttermilk. You may need to use about 1 1/4 cups - 1 1/2 cups (start with less, you can always add more in). The buttermilk adds such great flavor to these biscuits so if you can get your hands on some, definitely give it a try. Also, if you use salted butter, make sure you leave out the additional salt that is added to the dough.

Zucchini-Chocolate Chip Muffins

I didn't have a shredder so my mum helped and cut the zucchini into thin strips. I added about 2 cups of shredded zucchini. I also crush the walnuts into small pieces. I used about 1/4 choco chip because that all I had. I also didn't have cinnamon but had cinnamon sugar, which I made a few years back, I just wing it with it.
The batter became sticky and gooey-looking which is good so it can hold the added things in place and not sink to the bottom.
It looks good but when I open the oven I could smell a hint of baking soda in the air. I was concern that my muffin will taste bitter. As I feared, I could taste a hint of bitterness on my first bite. I don't know, what went wrong. Is it because I didn't add enough cinnamon and choco chips to cover the baking soda bitterness? I followed the recipe other than the cinnamon and choco chips...But other than that the muffin was moist and the zucchini kind of dissolved, couldn't even taste it.

Combine flour, sugar, baking soda, cinnamon, and salt in a bowl. Mix egg, oil, milk, lemon juice, and vanilla extract in another bowl; stir into dry ingredients until just moistened. Fold in zucchini, chocolate chips, and walnuts. Fill prepared muffin cups 2/3 full.
Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
I also add a crumb topping. To test it out. The butter make the topping taste really good and it was crunchy.

1/2 cup brown sugar
1/4 cup of flour
1/4 t. cinnamon
1/4 cup butter, cubed.
Use fork to combine. Looking like coarse cornmeal, sprinkle over muffin cups before baking.

I watch ep 1-10ish and then stopped because it was getting boring and slow paced. Few months later, I read a post that suggested to watch episode 1 and 2 then skip to episode 30 when the revenge start to begin which I did and it's gets interesting.
